Indestructible Scones

Ingredients

  • 2 cups whole wheat pastry flour (or all-purpose flour) (473 ml)
  • 2 1/2 tsp baking powder (12.3 ml)
  • 1/2 tsp salt (2.5 ml)
  • 1/4 cup sugar (59.1 ml)
  • 1/2 cup raisins, currants, or dried cranberries (optional) (118 ml)
  • 1 1/3 cups heavy cream (or light cream) (315 ml)
  • Melted butter, for brushing
  • Sugar, for sprinkling

Instructions

  1. Preheat oven to 400°F (200°C).\n2. Combine flour, baking powder, salt, and sugar in a large bowl. Add dried fruit, if using.\n3. Gradually stir in cream until dough comes together. (Dough will be sticky.)\n4. Turn the dough out onto a lightly floured surface. Knead briefly to form a smooth ball. Pat the dough into an 8-inch circle and cut into wedges, or drop the dough by spoonfuls onto a parchment-lined baking sheet.\n5. Brush wedges or dollops with melted butter and sprinkle liberally with sugar.\n6. Bake for 17 minutes, or until golden brown.
