Delicious Lentil Soup

Ingredients
- 1 cup lentils, picked over and rinsed (237 ml)
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tsp cumin (4.9 ml)
- 1 tsp curry powder (4.9 ml)
- 6 cups vegetable broth (1420 ml)
- 1 (14.5-ounce) can diced tomatoes
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Sauté onion, carrots, and celery in olive oil in a large pot over medium heat until softened. \n2. Add garlic, cumin, and curry powder; cook for 1 minute. \n3. Add lentils, vegetable broth, diced tomatoes, and a bay leaf. Bring to a boil. \n4. Reduce heat and simmer for 45 minutes, or until lentils are tender. \n5. Season with salt and pepper. Remove the bay leaf before serving.
