Detox Soup

Ingredients
- Detox Soup:
- 1 cup cauliflower, chopped
- 1 cup carrots, chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 Tbsp avocado oil
- 1 Tbsp chickpea miso
- 1 cup cooked chickpeas
- 1 tsp sea salt
- 1 tsp ground coriander
- 1 Tbsp chopped cilantro
- 1 tsp Celtic Sea salt
Instructions
- 1. Sauté cauliflower, carrots, onion, and garlic in avocado oil in a large pot over medium heat until softened. Add miso, chickpeas, sea salt, coriander, and cilantro. Add enough water to cover vegetables. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 20 minutes. Season with Celtic sea salt to taste.
