Perfect Grilled Steak (Lobel's)

Ingredients
- 4 (16 oz.) bone-in strip steaks
- Pepper
- Salt
- Olive oil
Instructions
- For steaks 1 1/4 inch thick or more, use indirect grilling: sear briefly over high direct heat, then finish over moderate indirect heat.
- Bring steaks to room temperature (~30 minutes).
- Assemble with olive oil, sea or kosher salt, and pepper just before grilling.
- Sear over direct heat 2–4 minutes depending on thickness and heat.
- Move steaks to indirect heat (grill lid on) until done.
- Brush with olive oil if desired.
- Check internal temperature after ~80% of estimated cooking time.
- Rest steaks 3–4 minutes before serving.
