Perfect Grilled Steak (Lobel's)

Ingredients

  • 4 (16 oz.) bone-in strip steaks
  • Pepper
  • Salt
  • Olive oil

Instructions

  1. For steaks 1 1/4 inch thick or more, use indirect grilling: sear briefly over high direct heat, then finish over moderate indirect heat.
  2. Bring steaks to room temperature (~30 minutes).
  3. Assemble with olive oil, sea or kosher salt, and pepper just before grilling.
  4. Sear over direct heat 2–4 minutes depending on thickness and heat.
  5. Move steaks to indirect heat (grill lid on) until done.
  6. Brush with olive oil if desired.
  7. Check internal temperature after ~80% of estimated cooking time.
  8. Rest steaks 3–4 minutes before serving.
