Ingredients
- 1 prime, boneless, thick-cut sirloin steak (24 oz), ideally dry-aged 25–30 days; trim away cap
- 1 tsp fine sea salt (4.9 ml)
- 1/4 tsp onion powder (1.2 ml)
- 1/4 tsp garlic powder (1.2 ml)
- 1/4 tsp ground cumin (1.2 ml)
- 1/4 tsp raw sugar (1.2 ml)
- Green tomato relish: 3 lb green tomatoes (seeded, fine diced)
- Green tomato relish: 1 medium red onion, finely diced
- Green tomato relish: 1 green bell pepper, finely diced
- Green tomato relish: 1 red pepper, finely diced
- Green tomato relish: 1 jalapeño, finely diced (optional)
- Green tomato relish: 2 cups cider vinegar
- Green tomato relish: 1 cup cane sugar
- Green tomato relish: 1 tsp sea salt
- Green tomato relish: 1 tsp celery seed
- Green tomato relish: 1 tsp mustard seed
Instructions
- Remove steak from fridge 1 hour before grilling.
- Mix spices and season steak liberally.
- Grill over high heat for 6 minutes per side or until internal temperature reaches 118°F.
- Rest 5 minutes before serving.
- Relish: bring vinegar, sugar, seeds, and salt to a boil.
- Add vegetables, return to boil, then simmer 35 minutes until thick.
- Serve relish cold alongside steak.
