Ingredients

  • 1 prime, boneless, thick-cut sirloin steak (24 oz), ideally dry-aged 25–30 days; trim away cap
  • 1 tsp fine sea salt (4.9 ml)
  • 1/4 tsp onion powder (1.2 ml)
  • 1/4 tsp garlic powder (1.2 ml)
  • 1/4 tsp ground cumin (1.2 ml)
  • 1/4 tsp raw sugar (1.2 ml)
  • Green tomato relish: 3 lb green tomatoes (seeded, fine diced)
  • Green tomato relish: 1 medium red onion, finely diced
  • Green tomato relish: 1 green bell pepper, finely diced
  • Green tomato relish: 1 red pepper, finely diced
  • Green tomato relish: 1 jalapeño, finely diced (optional)
  • Green tomato relish: 2 cups cider vinegar
  • Green tomato relish: 1 cup cane sugar

Instructions

  1. Remove steak from fridge 1 hour before grilling.
  2. Mix spices and season steak liberally.
  3. Grill over high heat for 6 minutes per side or until internal temperature reaches 118°F.
  4. Rest 5 minutes before serving.
  5. Relish: bring vinegar, sugar, seeds, and salt to a boil.
  6. Add vegetables, return to boil, then simmer 35 minutes until thick.
  7. Serve relish cold alongside steak.
