Blueberry Lemon Thyme Smash

Ingredients
- 1/2 cup fresh or frozen blueberries, plus more for topping (118 ml)
- 1-2 tablespoons fresh thyme leaves, plus a sprig for serving
- Juice from 2 lemons (about 1/2 cup)
- 1/2 cup blueberry or blackberry jam (118 ml)
- 180ml bourbon or tequila (6 oz / 3/4 cup)
- 120ml elderflower liqueur, such as St-Germain (4 oz / 1/2 cup)
- 3-4 (12 oz) cans sparkling water, for topping
- Lemon thyme sugar, for the rim (optional): zest of 1 lemon + 2 tablespoons granulated sugar + 1 teaspoon chopped thyme
Instructions
- In a pitcher, muddle the blueberries, thyme, and lemon juice, squashing everything to release the juices.
- Add the jam, bourbon (or tequila), and elderflower liqueur. Stir to combine.
- Chill until ready to serve.
- To make the lemon thyme sugar: combine lemon zest, sugar, and chopped thyme on a shallow plate. Rim each glass in the sugar, then fill with ice.
- Strain the cocktail into the prepared glasses. Top off with sparkling water, then gently stir to combine.
- Garnish with a thyme sprig and a few fresh blueberries.
