Skillet Caramel-Apple Crisp

Ingredients
- Caramel: 2 cups granulated sugar, 3/4 cup unsalted butter, 1 cup heavy cream, 1 tsp vanilla, 1 tsp kosher salt
- Filling: 3 lbs tart apples (about 6), 1 T lemon juice, 1 tsp cinnamon, 1/2 tsp cardamom, 1/8 tsp cloves, pinch salt
- Topping: 1 cup flour, 1 cup old-fashioned oats, 1/3 cup chopped pecans, 1/3 cup light brown sugar, 1/2 tsp kosher salt, 1/2 cup unsalted butter
Instructions
- Make caramel: cook sugar and butter without stirring until melted and bubbling. Stir until deep golden. Whisk in cream, vanilla, salt.
- Toss sliced apples with spices and 1/2 cup caramel. Scrape into 9-10 inch oven-safe skillet.
- Mix topping ingredients; mash butter into dry ingredients. Spread over apples.
- Bake at 350°F for 40-50 minutes until golden and bubbling. Serve with extra caramel and ice cream.
Wine Pairing: Dessert (Calvados, Ice Wine) — Apple brandy or ice wine echoes the caramel-apple flavors.
