Chocolate Chip Cookies (Robert MacMillan)

Ingredients
- 1 cup dark brown sugar (237 ml)
- 1 cup white granulated sugar (237 ml)
- 2 eggs
- 2 sticks salted butter (226g)
- 1 tsp vanilla extract (4.9 ml)
- 1 tsp almond extract (4.9 ml)
- 1 tsp baking soda (4.9 ml)
- 1 tsp cornstarch (4.9 ml)
- 1/2 tsp coarse salt (2.5 ml)
- 3 cups unbleached all-purpose flour (710 ml)
- 2 cups chocolate chips (473 ml)
Instructions
- Mix sugars in a bowl; smooth lumps.
- Melt butter over low heat; cool slightly; beat in eggs one at a time.
- Add vanilla and almond extracts.
- Stir in baking soda and cornstarch.
- Add salt, then flour and chocolate chips.
- Preheat oven to 350°F (175–180°C).
- Scoop onto sheet and bake 12 minutes.
- Cool on rack.
