Pimento Cheese

Ingredients

  • 8 ounces cream cheese, softened (227 g)
  • 1 lemon, juiced
  • 2 cups mayonnaise (473 ml)
  • 2 Tbsp Worcestershire sauce (29.6 ml)
  • 1/2 tsp sweet smoked paprika (2.5 ml)
  • 1/4 tsp hot smoked paprika or cayenne pepper (1.2 ml)
  • 1 1/4 cups pickled sweet peppers or roasted red peppers, drained, divided (296 ml)
  • 20 ounces sharp cheddar cheese, shredded (567 g)
  • 1/2 cup yellow onion, minced (118 ml)

Instructions

  1. Combine cream cheese, lemon juice, mayonnaise, Worcestershire sauce, paprika, cayenne pepper (if using), and 1/4 cup of the pickled or roasted peppers in a food processor. Process until smooth. Transfer to a large bowl.\n2. Finely chop the remaining 1 cup peppers. Add chopped peppers, minced onion, and shredded cheddar cheese to the cream cheese mixture.\n3. Mix well and refrigerate for at least 1 hour before serving.
