Pickled Onions

Ingredients

  • 3 cups white vinegar
  • 1/4 cup sugar (to taste)
  • 1 large red onion, sliced
  • Water (to top off jar, if needed)

Instructions

  1. Combine vinegar and sugar in a bowl.
  2. Add sliced onion to a 24 oz mason jar and pour vinegar mixture over it.
  3. Top off with water if needed.
  4. Ready in 24 hours; keeps up to a month in the refrigerator.
  5. Optional add-ins: carrots, beans, cucumbers; jalapenos (wear gloves, avoid eyes).
