Ginger Simple Syrup

Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup sliced fresh ginger root

Instructions

  1. Combine sugar, water, and ginger in a small saucepan over medium heat.
  2. Stir until the sugar dissolves.
  3. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes.
  4. Strain out the ginger slices before using or storing.
  5. Store refrigerated in a sealed jar for up to 2 weeks.
  6. Lower-sugar variant: steep sliced ginger in hot water with 2 tablespoons sugar and a few drops of stevia.
Great for George's Covid-Tini. Also works as a sweetener for tea drinks and coffee.
