Ginger Simple Syrup

Ingredients
- 1 cup granulated sugar (237 ml)
- 1 cup water (237 ml)
- 1 cup sliced fresh ginger root (237 ml)
Instructions
- Combine sugar, water, and ginger in a small saucepan over medium heat.
- Stir until the sugar dissolves.
- Bring to a boil, then reduce to a simmer and cook for 15-20 minutes.
- Strain out the ginger slices before using or storing.
- Store refrigerated in a sealed jar for up to 2 weeks.
- Lower-sugar variant: steep sliced ginger in hot water with 2 tablespoons sugar and a few drops of stevia.
