Candied Orange

Ingredients

  • 3 medium-sized sweet oranges, thin peel if possible
  • 300g sugar
  • A pinch of salt
  • A splash of lemon juice
  • A splash of white wine

Instructions

  1. Slice oranges 5mm thick with mandolin. Discard ends.
  2. In a wide shallow pan, layer orange slices alternating with sugar. Add salt, lemon juice, and white wine.
  3. Cover; simmer on low heat 1 hour without stirring. Swirl pan occasionally.
  4. Preheat oven to 100°C (convection). Cool oranges slightly, place on parchment-lined baking sheet.
  5. Brush with remaining syrup. Dehydrate in oven 1 hour until glossy and slightly dry.
