Candied Orange

Ingredients
- 3 medium-sized sweet oranges, thin peel if possible
- 300g sugar
- A pinch of salt
- A splash of lemon juice
- A splash of white wine
Instructions
- Slice oranges 5mm thick with mandolin. Discard ends.
- In a wide shallow pan, layer orange slices alternating with sugar. Add salt, lemon juice, and white wine.
- Cover; simmer on low heat 1 hour without stirring. Swirl pan occasionally.
- Preheat oven to 100°C (convection). Cool oranges slightly, place on parchment-lined baking sheet.
- Brush with remaining syrup. Dehydrate in oven 1 hour until glossy and slightly dry.
