Aïoli

Ingredients
- 2 egg yolks
- 1 teaspoon Dijon mustard
- Extra virgin organic olive oil
- 2 cloves garlic, grated
- Salt flakes, to taste
- Lemon juice, few drops
- Sunflower oil (optional, to start)
Instructions
- 1. Combine the egg yolks and Dijon mustard.
- 2. Whisk with a small amount of sunflower oil until it thickens and is safe.
- 3. Beat very hard with a fork.
- 4. Add the grated garlic and continue pouring olive oil little by little.
- 5. Add as much olive oil as desired, little by little, constantly whisking.
- 6. The aïoli should be quite hard, like a jelly, when finished.
Can be prepared in advance same day but keep chilled before serving. Start with sunflower oil to make emulsion easier.
