Aïoli

Ingredients

  • 2 egg yolks
  • 1 teaspoon Dijon mustard
  • Extra virgin organic olive oil
  • 2 cloves garlic, grated
  • Salt flakes, to taste
  • Lemon juice, few drops
  • Sunflower oil (optional, to start)

Instructions

  1. 1. Combine the egg yolks and Dijon mustard.
  2. 2. Whisk with a small amount of sunflower oil until it thickens and is safe.
  3. 3. Beat very hard with a fork.
  4. 4. Add the grated garlic and continue pouring olive oil little by little.
  5. 5. Add as much olive oil as desired, little by little, constantly whisking.
  6. 6. The aïoli should be quite hard, like a jelly, when finished.
Can be prepared in advance same day but keep chilled before serving. Start with sunflower oil to make emulsion easier.
