All-Purpose Vinaigrette

Ingredients
- 1/3 cup champagne vinegar
- 1/3 cup fresh lemon juice
- 1 1/2 Tbsp Dijon mustard
- 1 small garlic clove, minced
- 2 tsp kosher salt
- Freshly cracked black pepper
- 1 1/2 cups extra-virgin olive oil
Instructions
- 1. Combine all ingredients in a blender or food processor. Blend until emulsified. (Alternatively, whisk vigorously by hand.)
