Oatmeal Blueberry Muffins

Ingredients
- 1/2 cup rolled oats (118 ml)
- 1/2 cup orange juice (118 ml)
- 1 1/2 cups flour (355 ml)
- 1/2 cup sugar (118 ml)
- 1 1/4 teaspoons baking powder (6.2 ml)
- 1/2 teaspoon salt (2.5 ml)
- 1/4 teaspoon baking soda (1.2 ml)
- 1/2 cup vegetable oil (118 ml)
- 1 egg, slightly beaten
- 1 cup blueberries (237 ml)
- 2 tablespoons sugar (topping) (29.6 ml)
- 1/4 teaspoon cinnamon (topping) (1.2 ml)
Instructions
- Soak oats in orange juice.
- Mix dry ingredients. Add oil, egg, and oat mixture. Fold in blueberries.
- Fill muffin cups. Mix topping sugar and cinnamon; sprinkle over batter.
- Preheat to 425°F, reduce to 400°F. Bake 18-22 minutes until golden.
