Oat Pancakes with Berries

Ingredients

  • 1 cup rolled oats (237 ml)
  • 1 cup 2-percent-fat plain Greek yogurt (237 ml)
  • 2 eggs
  • 2 tsp chia seeds (9.9 ml)
  • 2 tsp flaxseed (9.9 ml)
  • Vegetable oil cooking spray
  • 1/2 cup sliced strawberries (118 ml)
  • 1/2 cup blueberries (118 ml)
  • 2 Tbsp pure maple syrup (29.6 ml)

Instructions

  1. In a blender, pulse oats until finely ground.\n2. Add yogurt, eggs, chia seeds, and flaxseed. Process until the batter is combined, but seeds remain intact.\n3. Set a large nonstick skillet over medium heat for 1 minute. Coat with cooking spray.\n4. Working in batches, cook 6 pancakes until golden brown, 1 to 2 minutes per side.\n5. Divide pancakes between two plates and serve topped with berries and maple syrup.
