Chocolate Waffles with Caramelized Bananas

Ingredients

  • 1 1/2 tsp active dry yeast (7.4 ml)
  • 1 cup warm water (about 105°F) (237 ml)
  • 3 cups all-purpose flour (710 ml)
  • 1/2 tsp salt (2.5 ml)
  • 1 cup milk (237 ml)
  • 1 stick unsalted butter (or 4 Tbsp butter + 4 Tbsp vegetable oil)
  • 2 large eggs, separated
  • 1/2 tsp vanilla extract (2.5 ml)
  • 1/8 cup unsweetened cocoa powder (29.6 ml)
  • 1/8 cup sweetened cocoa powder (or use 1/4 cup total of either) (29.6 ml)
  • 1/4 cup semisweet chocolate chips (59.1 ml)
  • 1 banana per serving, sliced (not too thinly)
  • 1-2 Tbsp unsalted butter per banana
  • 1/2 tsp granulated sugar per banana (2.5 ml)
  • Maple syrup and powdered sugar for serving

Instructions

  1. In a cup or small bowl, dissolve yeast in warm water.\n2. In a large bowl, whisk together flour, salt, and cocoa powder. Whisk in the yeast mixture, milk, butter and/or oil, egg yolks, and vanilla extract until smooth.\n3. In a separate bowl, beat egg whites with an electric mixer until soft peaks form. Gently fold into the batter. Let stand for 20 minutes. Preheat waffle iron.\n4. Fold chocolate chips into the batter. Lightly spray the preheated waffle iron with cooking spray. Pour about 1/3 cup or more batter into the iron and cook until done, about 5 minutes.\n5. Transfer waffles to a warm oven to keep warm until all are cooked.\n6. To caramelize bananas: Heat a pan over medium-high heat and melt butter. Add banana slices and sprinkle with sugar. Cook for 1 minute per side.\n7. Plate waffles, top with caramelized bananas, drizzle with maple syrup, and dust with powdered sugar.
