Ingredients
- Detox Soup
- 1 cup cauliflower, chopped (237 ml)
- 1 cup carrots, chopped (237 ml)
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 Tbsp avocado oil (14.8 ml)
- 1 Tbsp chickpea miso (14.8 ml)
- 1 cup cooked chickpeas (237 ml)
- 1 tsp sea salt (4.9 ml)
- 1 tsp ground coriander (4.9 ml)
- 1 Tbsp chopped cilantro (14.8 ml)
- 1 tsp Celtic Sea salt (4.9 ml)
Instructions
- Sauté cauliflower, carrots, onion, and garlic in avocado oil in a large pot over medium heat until softened. Add miso, chickpeas, sea salt, coriander, and cilantro. Add enough water to cover vegetables. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 20 minutes. Season with Celtic sea salt to taste.
