Butter Lettuce Salad with Goat Cheese, Piquillo Peppers & Toasted Sunflower Seeds

Ingredients

  • Juice of 1 lime
  • 1 garlic clove, minced
  • 2 Tbsp rice wine vinegar (29.6 ml)
  • 2 Tbsp whole-grain mustard (29.6 ml)
  • 1-2 Tbsp honey
  • 1 tsp kosher salt (4.9 ml)
  • 3 Tbsp olive oil (44.4 ml)
  • Butter lettuce
  • Piquillo peppers
  • Crumbled goat cheese
  • Toasted sunflower seeds

Instructions

  1. In a jar, combine lime juice, garlic, rice wine vinegar, mustard, honey, and salt. Shake vigorously until honey dissolves.\n2. Add olive oil and shake again. \n3. Toss butter lettuce, piquillo peppers, goat cheese, and toasted sunflower seeds with vinaigrette.
Wine Pairing: Light White (Sauvignon Blanc) — Sauvignon Blanc or a dry Riesling.
