Thai Green Curry Meatballs

Ingredients
- 3/4-pound ground chicken
- 3/4-pound ground pork
- 2 scallions, chopped
- 1 shallot, finely chopped
- 2-3 Tbsp chopped fresh mint and cilantro, combined
- 1-2 Tbsp Thai green curry paste
- 1/4-1/2 tsp soy sauce
- 2 tsp sambal oelek (9.9 ml)
- 1 Tbsp fresh lime juice (14.8 ml)
- 1/4-1/2 tsp fish sauce
- 1/4-1/2 tsp onion powder
- 1 large egg
- 1/2 cup panko breadcrumbs (118 ml)
- 1 - 1 1/2 tsp kosher salt
- Olive oil, for brushing
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with foil and brush lightly with olive oil.\n2. Combine all ingredients (except olive oil) in a large bowl. Mix well.\n3. Form the mixture into 1 1/2-inch meatballs. Arrange on the prepared baking sheet.\n4. Brush meatballs with olive oil.\n5. Bake for 17-20 minutes, or until cooked through. Broil for the last 2 minutes for additional browning, if desired.\n6. Serve meatballs with sweet chili sauce, a side salad, or over orzo pasta.
