Tequila Lime Marinated Flank Steak

Ingredients

  • 1 1/2-2 pounds flank steak
  • 1/2 head garlic, minced
  • 3/4 cup lime juice (from about 8-10 limes) (177 ml)
  • 1/2 cup Blanco tequila (118 ml)
  • 1/3 cup soy sauce (78.9 ml)
  • 1 bunch cilantro, roughly chopped (leaves and stems)
  • 1 jalapeño pepper, seeded and diced
  • 1 serrano pepper, seeded and diced
  • 1 tsp ground cumin (4.9 ml)
  • 1 Tbsp honey (14.8 ml)
  • 1 Tbsp Dijon mustard (14.8 ml)
  • 1/2 medium red onion, sliced
  • 1 tsp black pepper (4.9 ml)
  • 1 tsp salt (4.9 ml)

Instructions

  1. Combine all marinade ingredients in a large bowl and whisk to combine.\n2. Score the flank steak lightly with a sharp knife. Place the steak in a large resealable bag. Pour the marinade over the steak. Seal the bag and turn to coat. Refrigerate for 3-24 hours.\n3. Preheat the grill to high heat (400°F).\n4. Remove steak from the marinade and discard the marinade. Reduce grill heat to medium.\n5. Grill the steak for about 4 minutes per side for medium-rare.\n6. Remove the steak from the grill and let rest for 10 minutes. Slice against the grain before serving.
