Peas and Prosciutto Pasta w/ Chicken

Ingredients

Instructions

  1. Chicken
  2. 1 lb chicken, cut into bite-size pieces. Saute in olive oil with herbs de Provence. Brown the chicken to get some crispiness. It doesn't need to be thoroughly cooked because it keeps cooking in the pasta. Set aside.
  3. Sauce
  4. Add 1 Tbs butter to a pan with 1-2 shallots. Cook it down a tad, then add the garlic (turn the heat down so you don't burn it).
  5. Add prosciutto.
  6. Wine is optional here; if you use it, cook it down a bit before adding the chicken.
  7. Re-add the chicken.
  8. Add broth (make it saucy) - you can get creative with your broth juices here.
  9. Add peas and cream. Cook it down.
  10. Add cream and parmesan cheese.
  11. A squeeze of lemon (great to cut the cream flavor and add a punch).
  12. Pasta (while the sauce cooks)
  13. Cook the pasta. PRESERVE a cup of pasta water for the sauce.
  14. Combine
  15. Add the pasta with 1/2 cup pasta water (and maybe some butter).
  16. Add red pepper flakes, salt, and pepper.
  17. Taste-Test Suggestions
  18. Salt / pepper.
  19. If too thick, add broth.
  20. If too creamy, add lemon.
  21. Parmesan.
George's recipe. Optional add-ins: saute mushrooms and artichoke hearts separately and toss in with the pasta. Wine is optional in the sauce.
Wine Pairing: Medium White — Chardonnay — the wine's buttery richness and soft acidity complement the cream-and-parmesan sauce while standing up to the prosciutto and chicken.
