Instant Pot Carnitas

Ingredients

  • 3 1/2 pounds boneless pork shoulder, cubed (1588 g)
  • 1 cup low-sodium chicken stock (237 ml)
  • 1/2 cup orange juice (118 ml)
  • Juice of one lime
  • 1/2 teaspoon soy sauce (2.5 ml)
  • 1-2 teaspoons whole allspice
  • 1 dried bay leaf
  • 1 tablespoon kosher salt (14.8 ml)
  • 1/4 teaspoon black pepper (1.2 ml)
  • 1 teaspoon onion powder (4.9 ml)
  • 3/4 teaspoon garlic powder (3.7 ml)
  • 1/4 teaspoon paprika (1.2 ml)
  • 1/4 teaspoon Lawry's seasoning salt (1.2 ml)
  • 1/2-3/4 teaspoon dried oregano
  • 1/4 teaspoon ancho chile powder (1.2 ml)

Instructions

  1. Combine dry seasonings; toss with pork.
  2. Add stock, OJ, lime juice, allspice, bay leaf to Instant Pot. Add seasoned pork.
  3. Cook high pressure 27-28 minutes. Natural release 15 minutes.
  4. Transfer meat to baking sheet. Shred with forks.
  5. Broil 2-3 minutes, stir, broil again 2-3 minutes until crispy. Serve with tortillas and accompaniments.
Wine Pairing: Rosé (Grenache Rosé) — Dry rosé pairs well with citrus-braised pork.
