Guga's Indoor Steak

Ingredients

  • 2-inch thick steak, on bone (aged ideal)
  • Twine
  • Garlic cloves
  • Garlic powder
  • Coarse salt
  • Pepper
  • Avocado or olive oil
  • Salted butter
  • Carbon steel pan

Instructions

  1. Wrap steak twice with twine.
  2. Season all around with salt, pepper, and a little garlic powder.
  3. Heat steak 1 minute per side and edges on medium heat; turn off burner after Maillard browns exterior.
  4. Add butter and garlic cloves; turn burner to medium-high and baste continuously until cloves brown.
  5. Turn off burner; finish in 350°F oven until internal temp reaches 135°F.
  6. Rest 10 minutes, remove twine, slice, and serve.
