Guga's Indoor Steak

Ingredients
- 2-inch thick steak, on bone (aged ideal)
- Twine
- Garlic cloves
- Garlic powder
- Coarse salt
- Pepper
- Avocado or olive oil
- Salted butter
- Carbon steel pan
Instructions
- Wrap steak twice with twine.
- Season all around with salt, pepper, and a little garlic powder.
- Heat steak 1 minute per side and edges on medium heat; turn off burner after Maillard browns exterior.
- Add butter and garlic cloves; turn burner to medium-high and baste continuously until cloves brown.
- Turn off burner; finish in 350°F oven until internal temp reaches 135°F.
- Rest 10 minutes, remove twine, slice, and serve.
