Crème Fraîche Pasta with Peas and Bacon

Ingredients
- 1 pound pasta (your choice of shape) (454 g)
- 1 Tbsp olive oil (14.8 ml)
- 3 bunches green onions, chopped
- 2-3 garlic cloves, minced
- 4-5 slices bacon, chopped
- 1/4-1/2 tsp red pepper flakes
- 1/2 cup grated Parmesan cheese (118 ml)
- 3/4 cup crème fraîche (177 ml)
- 1 lemon, zested
- 1 cup frozen peas (237 ml)
- Salt and black pepper, to taste
Instructions
- Cook pasta in a large pot of boiling salted water according to package directions. Add frozen peas during the last minute of cooking. Reserve 1 cup of pasta cooking water. Drain pasta and peas. \n2. Trim and thinly slice green onions. Chop bacon. Set aside a small amount of each for garnish. \n3. Heat olive oil in a large skillet over medium-high heat. Add green onions and season with salt and pepper. Cook, stirring occasionally, for 2-3 minutes. Add bacon, garlic, and red pepper flakes. Cook until bacon is crisp and onions are lightly browned, about 6-7 minutes. \n4. In a large bowl, combine Parmesan cheese, crème fraîche, and lemon zest. Stir in 1/2 cup reserved pasta water until the sauce is smooth. Season with salt and pepper. Stir in the bacon and green onion mixture.\n5. Add pasta and peas to the sauce. Toss until well coated. Add more pasta water if needed to loosen the sauce.\n6. Serve garnished with the reserved green onions and bacon.
