Mojito

Ingredients
- 45ml white Cuban rum (1 1/2 oz)
- 22ml freshly squeezed lime juice (3/4 oz)
- 2 teaspoons white sugar (9.9 ml)
- 6-8 fresh mint leaves, plus a sprig for garnish
- Soda water, to top
- Crushed or cracked ice
Instructions
- In a highball glass, combine the mint leaves, sugar, and lime juice.
- Muddle gently to release the mint oils — do not shred the leaves.
- Add a splash of soda water and fill the glass with crushed ice.
- Pour in the rum and top with more soda water.
- Stir gently to lift the mint from the bottom.
- Garnish with a fresh mint sprig and a lime wheel.
