Mojito

Ingredients

  • 45ml white Cuban rum (1 1/2 oz)
  • 22ml freshly squeezed lime juice (3/4 oz)
  • 2 teaspoons white sugar (9.9 ml)
  • 6-8 fresh mint leaves, plus a sprig for garnish
  • Soda water, to top
  • Crushed or cracked ice

Instructions

  1. In a highball glass, combine the mint leaves, sugar, and lime juice.
  2. Muddle gently to release the mint oils — do not shred the leaves.
  3. Add a splash of soda water and fill the glass with crushed ice.
  4. Pour in the rum and top with more soda water.
  5. Stir gently to lift the mint from the bottom.
  6. Garnish with a fresh mint sprig and a lime wheel.
