Tiramisu

Ingredients
- 48 ladyfingers
- 1 cup strong coffee (237 ml)
- 1/2 cup plus 1 tablespoon sugar (118 ml)
- 4 eggs, separated
- 1 lb mascarpone cheese (454 g)
- 1/4 cup light rum (59.1 ml)
- 1 tablespoon lemon juice (14.8 ml)
- 1 tablespoon vanilla (14.8 ml)
- 1 cup heavy cream (237 ml)
- 1 tablespoon confectioners' sugar (14.8 ml)
- 8 ounces bittersweet chocolate, grated (227 g)
Instructions
- Combine coffee with 1 T sugar; set aside.
- Beat yolks with remaining sugar until thick and ribbon-like. Stir in mascarpone until smooth. Add rum, lemon juice, vanilla.
- Partially whip cream with confectioners' sugar; fold into cheese mixture. Whip egg whites until stiff; fold in.
- Dip half the ladyfingers in coffee; line a serving dish. Spoon cream mixture over. Repeat layers.
- Cover top with grated chocolate. Chill. Can be made 3 days ahead.
