Chocolate Chip Cookies (Uncle Rob)

Ingredients

  • 1 cup dark brown sugar (237 ml)
  • 1 cup white granulated sugar (237 ml)
  • 2 eggs
  • 2 sticks salted butter (226g)
  • 1 tsp vanilla extract (4.9 ml)
  • 1 tsp almond extract (4.9 ml)
  • 1 tsp baking soda (4.9 ml)
  • 1 tsp cornstarch (4.9 ml)
  • 1/2 tsp coarse salt (2.5 ml)
  • 3 cups unbleached all-purpose flour (710 ml)
  • 2 cups chocolate chips (473 ml)

Instructions

  1. Mix sugars in a bowl; smooth lumps.
  2. Melt butter over low heat (do not bubble). Cool slightly, then beat in eggs one at a time.
  3. Stir in vanilla and almond extracts.
  4. Add baking soda and cornstarch; mix.
  5. Add salt, then stir in flour and chocolate chips.
  6. Preheat oven to 350°F (175–180°C).
  7. Scoop spoonfuls onto cookie sheet; bake 12 minutes.
  8. Cool on rack; store or freeze.
