Thai Peanut Dressing

Ingredients
- 1/2 cup creamy peanut butter
- 2 Tbsp fresh lime juice
- 2 Tbsp rice vinegar
- 2 Tbsp low-sodium soy sauce or tamari
- 1 Tbsp honey (or maple syrup or agave nectar)
- 1 tsp toasted sesame oil
- 1 tsp sriracha
- 1/4 tsp ground ginger
- 1 garlic clove, minced
- 1-2 Tbsp water or coconut milk, as needed
Instructions
- 1. Combine all ingredients in a bowl and whisk until smooth. (Or shake together in a jar until well combined.)\n2. If desired, thin the dressing with water or coconut milk.\n3. Serve immediately or store in an airtight container in the refrigerator for up to 1 week.
