Thai Peanut Dressing

Ingredients

  • 1/2 cup creamy peanut butter (118 ml)
  • 2 Tbsp fresh lime juice (29.6 ml)
  • 2 Tbsp rice vinegar (29.6 ml)
  • 2 Tbsp low-sodium soy sauce or tamari (29.6 ml)
  • 1 Tbsp honey (or maple syrup or agave nectar) (14.8 ml)
  • 1 tsp toasted sesame oil (4.9 ml)
  • 1 tsp sriracha (4.9 ml)
  • 1/4 tsp ground ginger (1.2 ml)
  • 1 garlic clove, minced
  • 1-2 Tbsp water or coconut milk, as needed

Instructions

  1. Combine all ingredients in a bowl and whisk until smooth. (Or shake together in a jar until well combined.)\n2. If desired, thin the dressing with water or coconut milk.\n3. Serve immediately or store in an airtight container in the refrigerator for up to 1 week.
