Pickled Onions

Ingredients
- 3 cups white vinegar (710 ml)
- 1/4 cup sugar (to taste) (59.1 ml)
- 1 large red onion, sliced
- Water (to top off jar, if needed)
Instructions
- Combine vinegar and sugar in a bowl.
- Add sliced onion to a 24 oz mason jar and pour vinegar mixture over it.
- Top off with water if needed.
- Ready in 24 hours; keeps up to a month in the refrigerator.
- Optional add-ins: carrots, beans, cucumbers; jalapenos (wear gloves, avoid eyes).
