Fancy Blue Cheese Dressing

Ingredients
- 3 Tbsp fresh lemon juice (44.4 ml)
- 1 Tbsp apple cider vinegar (14.8 ml)
- 2 tsp freshly ground black pepper (9.9 ml)
- 1 tsp Worcestershire sauce (4.9 ml)
- 1/2 tsp hot sauce (such as Tabasco) (2.5 ml)
- 1/4 tsp kosher salt (1.2 ml)
- 1 garlic clove, minced
- 1 small shallot, minced
- 3/4 cup whole buttermilk (177 ml)
- 3 Tbsp canola mayonnaise (44.4 ml)
- 3 Tbsp reduced-fat sour cream (44.4 ml)
- 3 ounces blue cheese (such as Rogue Creamery or Maytag), crumbled (about 3/4 cup) (85.0 g)
Instructions
- Combine the first 8 ingredients (through shallot) in a jar. Stir and let stand for 10 minutes to macerate. Add buttermilk, mayonnaise, sour cream, and cheese. Seal the jar. Shake vigorously before serving. Refrigerate for up to 5 days.
Wine Pairing: Light White (Sauvignon Blanc) — Dependent upon the salad ingredients, but generally pairs well with Sauvignon Blanc or Pinot Grigio.
