Instructions

  1. Combine each rub's ingredients and store in airtight containers.
  2. Apply dry rubs a day before for dry brine when possible.
  3. Optional buttermilk wet brine for wings (2L buttermilk + 1 cup kosher salt for 4 hours), then apply wing dust.
