Instructions
- Combine each rub's ingredients and store in airtight containers.
- Apply dry rubs a day before for dry brine when possible.
- Optional buttermilk wet brine for wings (2L buttermilk + 1 cup kosher salt for 4 hours), then apply wing dust.
