Basic Brine

Ingredients

  • 1/2 cup kosher salt (118 ml)
  • 1/3 cup sugar (78.9 ml)
  • 1/4 cup juniper berries (59.1 ml)
  • 2 Tbsp black peppercorns (29.6 ml)
  • 4 bay leaves
  • 4 cups water (946 ml)

Instructions

  1. Combine water, salt, sugar, juniper berries, peppercorns, and bay leaves in a pot. Bring to a boil.\n2. Stir until salt and sugar dissolve. Remove from heat and let cool completely before using.\n3. Store in the refrigerator for up to 2 weeks.
