Spiced Pumpkin and Walnut Bread

Ingredients
- 2 teaspoons freshly grated ginger (9.9 ml)
- 2 eggs
- 1/3 cup water (78.9 ml)
- 1 cup maple syrup (237 ml)
- 1/2 cup agave syrup (118 ml)
- 1/2 cup vegetable oil (118 ml)
- 1 cup pureed pumpkin (237 ml)
- 1 teaspoon vanilla (4.9 ml)
- 2 cups white spelt flour (473 ml)
- 1/2 cup buckwheat flour (118 ml)
- 3/4 teaspoon baking soda (3.7 ml)
- 1/2 teaspoon salt (2.5 ml)
- 1/2 teaspoon cinnamon (2.5 ml)
- 1/2 teaspoon cloves (2.5 ml)
- 1/2 teaspoon allspice (2.5 ml)
- 1 teaspoon garam masala (4.9 ml)
- 1 cup walnuts (237 ml)
Instructions
- Preheat oven to 350°F.
- Whisk ginger, eggs, water, maple syrup, agave, oil, pumpkin, and vanilla.
- Sift in flours, baking soda, salt, and spices. Fold in walnuts.
- Grease a 9x5x3 inch glass loaf pan. Pour in batter.
- Bake until browned and a skewer comes out clean, about 1 hour 10 minutes.
