Janette's Pumpkin Bread

Ingredients

  • 2/3 cup butter (158 ml)
  • 2 2/3 cups sugar (631 ml)
  • 4 eggs
  • 1 can pumpkin (small, 2 cups)
  • 2/3 cup water (158 ml)
  • 3 1/2 cups flour (828 ml)
  • 2 teaspoons baking soda (9.9 ml)
  • 1 1/2 teaspoons salt (7.4 ml)
  • 1/2 teaspoon baking powder (2.5 ml)
  • 1 teaspoon cloves (4.9 ml)
  • 1 teaspoon cinnamon (4.9 ml)
  • Dash nutmeg
  • 2/3 cup nuts (walnuts or pecans) (158 ml)
  • 1 cup raisins (237 ml)

Instructions

  1. Preheat oven to 350°F.
  2. Pour all ingredients into large bowl (dry and wet) then blend together.
  3. Pour into 3 greased large loaf pans (8x4) or 6 small.
  4. Bake at 350°F for 1 hour.
Wine Pairing: Dessert (Riesling Spätlese) — Off-dry Riesling balances the spiced sweetness.
