Buckwheat Waffles

Ingredients
- 2 cups buckwheat flour
- 3 tsp baking powder
- 1 Tbsp sugar
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 2 large eggs, separated
- 1/3 cup oil (coconut, vegetable, etc.)
- 1 3/4 cups milk
- 1/2 tsp pure vanilla extract
Instructions
- 1. Preheat waffle iron and coat with cooking spray. \n2. Separate egg yolks and whites, setting egg whites aside. \n3. In a bowl, combine buckwheat flour, baking powder, sugar, salt, cinnamon, egg yolks, oil, milk, and vanilla extract. Stir to combine. \n4. Beat egg whites with an electric mixer until soft peaks form. \n5. Gently fold egg whites into the waffle batter. \n6. Pour about 2/3 cup batter onto the preheated waffle iron for each waffle. \n7. Cook until golden brown.
