Jammy Brie Galette

Ingredients

  • 1 sheet frozen puff pastry (14 oz. package or half of 17.3 oz. package), thawed
  • All-purpose flour for surface
  • ½ cup jam (fig or apricot)
  • 8 oz. brie, thinly sliced
  • 3-4 sprigs fresh thyme
  • Freshly ground black pepper
  • 1 large egg, beaten

Instructions

  1. 1. Place rack in middle of oven and preheat to 375°F. Roll out thawed puff pastry on lightly floured surface to a 13×11-inch rectangle. Transfer to parchment-lined baking sheet.
  2. 2. Using a paring knife, lightly score a rectangle in pastry 1½ inches from edges. Prick pastry inside border in several places with a fork.
  3. 3. Spread jam over pastry, staying within the scored border. Arrange sliced brie on top of jam (it's okay if it doesn't cover completely). Break up thyme sprigs and scatter over cheese. Season with freshly ground pepper.
  4. 4. Fold pastry at score marks up and over filling, tucking and pleating as needed to form an edge of crust around galette. Brush exposed crust with beaten egg.
  5. 5. Bake until pastry is puffed, golden brown, and crisp, 30-40 minutes. Let cool before slicing.
Fig or apricot jam work particularly well for this recipe. The galette can be served warm or at room temperature, making it perfect for entertaining.
